Camping Recipe: Best Campfire Grilled Chicken

Ingredients

  • 1/2 c. extra-virgin olive oil
  • 1/4 c. soy sauce
  • 3 garlic cloves, chopped
  • 1 tbsp. brown sugar 
  • 2 tbsp. lemon juice
  • 1 tbsp. Dijon mustard
  • 1 tsp. fresh thyme leaves, chopped
  • 1 tsp. kosher salt
  • 1/2 tsp. ground black pepper
  • 4 lb. bone-in chicken pieces, such as drumsticks, thighs, or leg quarters
  • 1 c. marinade
  • Oil, as needed

Instructions:

  1. Before leaving home, make the marinade and store it in a sealed container for up to four days.
  2. To make the marinade, wash and dry the garlic and thyme. Chop the garlic and thyme, and then combine olive oil, soy sauce, garlic, brown sugar, lemon juice, Dijon mustard, thyme, salt, and black pepper. We like to use a pint-sized mason jar because it makes it easy to combine since you can just cover the jar with the lid and shake until blended.
  3. When you’re ready to use it, add the chicken to a resealable bag or container and dump the contents of the marinade into that container, being sure to cover the chicken completely. Refrigerate for 30 minutes or up to four hours.
  4. When you’re ready to start cooking, preheat the grill on one side to medium-high heat which should be around 350°. you will want to leave the other side of the grill unlit for indirect heat.
  5. Be sure to oil the grill grates with a paper towel, soaked in olive oil, and a pair of tongs before you are ready to add the chicken to the grill.
  6. Remove the chicken from the marinade and pat dry with paper towels, then season with salt and pepper and place skin-side-down on the left side of the grill to cook over direct heat.
  7. Cover and cook until the chicken releases from the girl easily, which should be about 6 to 8 minutes; this time should also produce defined grill marks on that side of the chicken.
  8. Flip the chicken to the inlet side of the grill and then cover and cook for an additional 35 to 45 minutes, depending on the thickness of the chicken. Do you want to be sure the internal temperature reaches 165°F before removing from the grill.
  9. Set the chicken aside and allow it to rest for five minutes before serving with your favorite cookout staples like baked beans, coleslaw, potato salad, and more.
